What Is Yoshon Flour And How Does It Affect My Sunflower Bagels?

On occasion a customer will leave disappointed that we have not been able to provide their very favorite Sunflower bagels as we had planned. This is due to a shortage of the sunflower bread mix used to make them, which is Yoshon and therefore limited in availability.
Yoshon flour is an “aged” flour, which, in the Hebrew tradition, is a growing and milling process that plays an important part of healthful and nutritious grain production and harvesting.

Today many companies circumvent the natural aging of grains in flour production through the use of chemicals and artificial conditioners. Here at Rosenfeld’s, we will not compromise our quality or traditions even if it means living without.
